VIDEO: St. Patrick's Day Baking

Just because St. Patrick's day is coming up I wanted to share this video on how to make Digestive Biscuits. It looks super easy but I tend to be super lazy and just buy them from the supermarket.
These do look really good though.



I also couldn't go past these rainbow cupcakes. They look really bright and colourful.
I am sure there are some kids (possibly my boys) who would love them!

Not that I make a lot of desserts but this looks amazing!





Here's the video for the marshmallow fluff as well.
We were able to buy it a couple of times from Woolworths but they no longer sell it. I did find it in The Chocolate Shop in the next town over from us. Yum! I love it with peanut butter!

Recipe: One Pot Chef - Taco Casserole

This looks rather nice but I'm thinking a small serve of this with lots of leafy green salad would make it even better.




Ingredients:

500g Beef Mince / Ground Beef
1 Small Brown Onion (chopped)
1 Tablespoon of Oil
400g Can of Diced Tomatoes Can of Red Kidney Beans (drained and rinsed)
Can of Cream of Chicken Soup (or any soup you prefer)
1/2 Cup of Water 35g
Sachet of Taco Seasoning
300g of Plain Corn Chips / Tortilla Chips (lightly crushed)
2 Cups of Grated Cheese Sour Cream and Tomato Salsa Dip (for topping)

Easy Chocolate Mousse Cake - RECIPE - One Pot Chef

Another easy recipe from the One Pot Chef





INGREDIENTS 



400g Dark Chocolate

600ml Thickened Cream (or any cream suitable for whipping)

2 Teaspoons of Vanilla Extract
200g Chocolate Biscuits (crushed)

100g of Butter (melted)

Milk Chocolate (grated, to garnish)



Preparation Time: About 20 minutes



Chilling Time: About 3 hours



SERVES 8

Instagram DESSERT chocolate mousse recipe cake from HOW TO COOK THAT

I stumbled across this youtube channel called How To Cook That
and a website with the same name by foodie Ann Reardon.
Some of the things she makes are amazing, a little time consuming, but amazing!
I personally don't think I have the patience to make most of these things but I certainly enjoy looking at the videos.

Mini Muesli Muffins

All wrapped up and ready to take to my Diabetic Support Group meeting for afternoon tea

INGREDIENTS

1 ½ cups Natural Muesli
1 cup wholemeal self raising flour
1 cup firmly packed grated carrot
1 large green apple, grated
½ cup sultanas
½ cup pecan nuts

2 eggs, lightly beaten
1/3 cup olive oil
1 cup soy milk or low fat dairy milk (I used dairy)


METHOD

  • Preheat oven to 190°C (375°F)
  • Place all dry ingredients into a large bowl. Stir to combine.
  • In a separate bowl, or a jug, combine all the wet ingredients.
  • Add the egg mixture to the dry ingredients and mix gently until just combined.
  • Spoon mixture into lightly greased mini muffin tins. There is enough mixture to make 36 mini muffins.
  • Bake in oven for 25 minutes.
These muffins can be frozen, or baked in regular sized muffin tins, which will give you 12 muffins.

Cheesy Garlic Bread Pizza Base - RECIPE

Gosh who needs garlic bread when you can have garlic pizza!
I have to try this recipe!

INGREDIENTS

2 Cups of Self Raising Flour (plus extra if required)
2 Cups of Natural Yoghurt (500g) [Greek Style Yoghurt]
Salt
2 Cloves of Crushed Garlic (or more!)
1/4 Cup of Olive Oil
2 Tablespoons of Freshly Chopped Parsley
1 Cup of Grated Cheese (use any cheese you like)
