VIDEO: St. Patrick's Day Baking

Just because St. Patrick's day is coming up I wanted to share this video on how to make Digestive Biscuits. It looks super easy but I tend to be super lazy and just buy them from the supermarket.
These do look really good though.



I also couldn't go past these rainbow cupcakes. They look really bright and colourful.
I am sure there are some kids (possibly my boys) who would love them!

Mini Muesli Muffins

All wrapped up and ready to take to my Diabetic Support Group meeting for afternoon tea

INGREDIENTS

1 ½ cups Natural Muesli
1 cup wholemeal self raising flour
1 cup firmly packed grated carrot
1 large green apple, grated
½ cup sultanas
½ cup pecan nuts

2 eggs, lightly beaten
1/3 cup olive oil
1 cup soy milk or low fat dairy milk (I used dairy)


METHOD

  • Preheat oven to 190°C (375°F)
  • Place all dry ingredients into a large bowl. Stir to combine.
  • In a separate bowl, or a jug, combine all the wet ingredients.
  • Add the egg mixture to the dry ingredients and mix gently until just combined.
  • Spoon mixture into lightly greased mini muffin tins. There is enough mixture to make 36 mini muffins.
  • Bake in oven for 25 minutes.
These muffins can be frozen, or baked in regular sized muffin tins, which will give you 12 muffins.

No Bake Tim Tam Cheesecake - RECIPE

The One Pot Chef is at it again. This time with one of my favourite biscuits. Yum!

INGREDIENT LIST:
===============
 
 
BASE: 
 
300g of Arnott’s Tim Tam Chocolate Biscuits (about 1 1/2 Packets)
70g of Unsalted Butter (melted and cooled)
 
 
CHEESECAKE: 
 
375g of Cream Cheese (at room temperature)
1/2 Cup of Caster Sugar (Super Fine White Sugar)
1 Teaspoon of Vanilla Extract
1 Cup of Whipping Cream
3 Teaspoons of Gelatine Powder
1/4 Cup of Boiling Water
200g of White Chocolate (melted and cooled)
100g of Arnott’s Tim Tam Chocolate Biscuits (about 6 biscuits, roughly chopped)
 
 

OPTIONAL: Extra chopped Tim Tams to top the cheesecake.

No Bake Nutella Cheesecake

Angus and I made the No-bake Cheesecake from the video I shared yesterday. 
My goodness it was delicious! And it was SO easy to prepare.

It doesn't look all that flash in the pan but looks can be deceiving. 

It was so good that Angus couldn't stop at just one slice!
INGREDIENTS IN THIS RECIPE:

250g of Plain Sweet Cookies (Graham Crackers / Digestives etc)
100g of Butter
400g Jar of Nutella (Chocolate Hazelnut Spread)
500g of Cream Cheese (at room temperature)
1/2 Cup of Icing Sugar / Powdered Sugar (about 70g)

Preparation Time: About 15 minutes
Chilling Time: About 4 - 5 hours

Baking Madness - Well Not Really

I wanted to bake a cake from scratch. Sadly I only had wholemeal flour in the cupboard & I couldn't be bothered looking for a recipe online that used wholemeal. Sometimes you just can't substitute white flour and wholemeal. It just doesn't work. So I cheated and used a packet mix. Silly me didn't take a photo with the frosting on the cake. It made it look so much better. That being said it does taste good.
