Look what I made for dinner last night. Home-made fish cakes. Mark & the boys LOVED them! I got the recipe out of a Diabetic Living magazine I had but I had to adapt it a bit because I didn't have all the ingredients listed. .

At least I know my family will eat stuff that is healthier for them. Especially if I can make it look as nice as last nights dinner.

Yum! I love fish and crab cakes. Also salmon patties. DELICIOUS...and good for you too!
Poetess, they certainly are good for you. I was thinking earlier that the last time I had these was when my sister made them for tea one night. I think I was a teenager at the time. I don't know why I never made them before now. I will definitely have to try different types of fish. I used tuna this time round.
Salmon works great...even better than tuna in my opinion. Add a little onion and...YUMMO!!
Poetess, I think I will use salmon next time. I find it less dry and it has more flavour.
