Recipe: Minestrone Soup

I pretty much used left over vegetables from the fridge. Any veg would be fine.

2 cups cabbage, finely sliced
1 cup capsicum, diced
2 carrots, diced
1 onion, diced
200g bacon pieces
1 zucchini. grated
2 x 440g tins diced tomatoes
2 cups water
3 chicken stock cubes
1 packet of taco mix (from Continental)
250 g pasta (half a packet) I used shell pasta.
Salt and pepper to taste

I placed all of this in the slow cooker for 6 hours on high. At the 5 hour mark or about an hour before you wish to eat the soup) add the pasta. That way it wont over cook.

Serve with crusty bread. Yum!
