Slow Cooker Recipe: Beef Vindaloo

Brodie had been wanting me to make a vindaloo for ages. He wanted to be just like Lister on Red Dwarf.


Everything is in the pot ready to go
1 tbsp crushed garlic
1 tbsp grated ginger
2 tbsp curry powder
1 ½ tsp cumin
1 ½ tsp cardamom
½ tsp ground cloves
½ tsp chilli flakes
¼ cup olive oil
½ cup white vinegar or apple cider vinegar

Place the above ingredients into a food processor to make a paste.

500g - 1 kg beef, diced (or meat of your choice)
1 large onion, sliced
2 red capsicums, sliced into strips (optional)
2 cups (or 1 x 400g tin) diced tomatoes
1 tsp table salt
I also added some diced pumpkin. 


Spray slow cooker with cooking spray. Place onions, capsicum, tomatoes and pumpkin on the bottom of the slow cooker. Add the curry paste. Then add the meat and sprinkle the salt over everything.

Cook on low for 6 hours or high setting for 3-4 hours.

I served this with rice and some steamed beans and peas on the side. I tried this without the sour cream and it was nice but a big dollop of the sour cream made it taste even better!
