Recipe - Sweet and Sour Meatballs


This was a recipe I got from a Slow Cooker Group I belong to on Facebook called Slow Cooker Recipes 4 Families. The group can be pretty busy but there are so many amazing recipes tried and tested. They are incredible. I must admit I have always loved my slow cooker but I love it even more now. Although I have yet to try a dessert recipe. That being said, the cakes and fudges that are being shared in the group are slowly making me change my mind. Basically if you can cook it in an oven you can pretty much cook it in your slow cooker too.

I actually cooked this recipe in the oven because I left it too late to place it in my slow cooker.


Sweet and Sour Meatballs

Meatballs
500g mince
1 egg
1 tbs curry powder
1 onion, grated or finely diced
1 carrot, grated
(I had some left over cooked cabbage that I chopped and added to the mix)

Sauce
1 onion, finely diced
3/4 cup tomato sauce (I used a tin of pumpkin soup instead - I was experimenting)
3/4 cup brown sugar (I actually left this out)
1 cup water (I used the tin the soup was in)
1 tbs vinegar
1 tbs worcester sauce
3 tbs plum jam (I used apricot because I didn't have plum)
1 tbs cornflour mixed with a splash of water.

Mix the ingredients for the meatballs together and roll the mixture into balls. You can bake them in the over (200°C) for around 20 minutes so that they hold shape while cooking in the slow cooker. Then place the meatballs in the slow cooker.

Mix all the ingredients for the sauce together. Pour on top of the meatballs.

Cook on high for 2.5 - 3 hours. Leave the lid off the the last 20-30 minutes so the sauce can thicken.

OVEN TIMES
Preheat oven to 200°C .
I skipped where you brown the meatballs in the oven. I just placed them in an oven proof dish that has a lid. I poured the sauce all over the meatballs and place the lid on then put the dish into the oven.
Cooking time 50 - 60 minutes

Serve with rice and steamed veg.
